Triggerfish is a personal favorite of many a local here. They’re a little harder to clean than other fish due to a thicker skin but the flavor is out of this world. If you know of an area around here that has Red Snapper or Grouper then there’s a good possibility that you can find Triggerfish nearby. For a real treat you should try this fish after it’s smoked, dried and salted.
